Medi Tahini Salad

Ingredients:

  • Courgettes x2

  • Peppers x3

  • Sweet Potato x2

  • Watercress

  • Spinach

  • Baby Vine or Cherry Tomatoes x 12

  • Rapeseed Oil

  • Can of Butter Beans

  • Garlic x2 cloves

  • Lemon

  • Smoked Bavarian

  • Tahini

  • Salt

  • Ras El Hanout

  • Black Pepper

  • Pine Nuts

How to:

  • Chop all vegetables to preferred portions.

  • Line your baking tray and pour in Sweet Potatoes, Courgettes and Peppers . Sprinkle salt, black pepper and rapeseed oil and mix .

  • Bake at 180• till the vegetables have become slightly charred and you are satisfied with the consistency/ flavoring. Then leaving to cool.

  • Into a big bowl add- Spinach, watercress, butter beans, charred vegetables, tomatoes and sprinkle on the Salad dressing with some Smoked Bavarian on top.

  • Finish off with some Pine Nuts and Enjoy :).

Salad dressing

  • Into a boil pour 3/4 tahini.

  • Add salt , Rai El Hanout, juice of half lemon, 2 TBS of water and mince 2 garlic cloves.

  • Add parsley.

( feel free to add more water or lemon depending on consistency- I like the dressing to be thick)
