Medi Tahini Salad
Ingredients:
Courgettes x2
Peppers x3
Sweet Potato x2
Watercress
Spinach
Baby Vine or Cherry Tomatoes x 12
Rapeseed Oil
Can of Butter Beans
Garlic x2 cloves
Lemon
Smoked Bavarian
Tahini
Salt
Ras El Hanout
Black Pepper
Pine Nuts
How to:
Chop all vegetables to preferred portions.
Line your baking tray and pour in Sweet Potatoes, Courgettes and Peppers . Sprinkle salt, black pepper and rapeseed oil and mix .
Bake at 180• till the vegetables have become slightly charred and you are satisfied with the consistency/ flavoring. Then leaving to cool.
Into a big bowl add- Spinach, watercress, butter beans, charred vegetables, tomatoes and sprinkle on the Salad dressing with some Smoked Bavarian on top.
Finish off with some Pine Nuts and Enjoy :).
Salad dressing
Into a boil pour 3/4 tahini.
Add salt , Rai El Hanout, juice of half lemon, 2 TBS of water and mince 2 garlic cloves.
Add parsley.
( feel free to add more water or lemon depending on consistency- I like the dressing to be thick)
