Homy Vegan Banana Bread

Ingredients:

  • 3/4 Ripe Bananas.

  • 6 tbsp Aquafaba.

  • 1/4 cups + 2tbsp Oat or any Plant Based Milk.

  • 1 tbsp Lemon Juice.

  • 1/3 cup Sunflower or any Neutral based Oil.

  • 3/4 cup Brown or Coconut Sugar.

  • 1 tsp Vanilla.

  • 2 Cups Spelt Flour or All Purpose Flour.

  • Sea Salt or Himalayan.

  • 1 tsp Baking Soda.

  • 1 tsp Baking Powder

  • 1 tsp Cinnamon.

  • 1/2 cup Blueberries

  • 1/2 cup Walnut's .

  • 1 tbsp Chai mix.

  • 100 g Dark Chocolate.

  • Vegan Butter.

How to:

  • Preheat the oven to 180°C.

  • Pour 6 tbsp of Aquafaba into a bowl and stir until the texture is fluffy and slightly off white. You can also substitute the Aquafaba with a flax seed egg ( 1 tbsp of flaxseed and add 3 tbsp of water- mix it until it has a goey texture).

  • Into a large bowl smash the banana’s.

  • Add into the same bowl : flour, salt, cinnamon, baking soda, baking powder, blueberries, walnuts, milk, oil, chai mix, lemon juice, sugar, vanilla and mix.

  • Line the baking tray with vegan butter or baking sheet.

  • Bake for 45- 50 mins.

  • After the Banana bread is fully baked ( make sure you prod the middle to ensure that the mixture is baked and is not runny). Leave to cool and then remove from the tray.

  • Boil some water into a small pan then add a glass bowl on top.

  • Line with some butter, crush your dark chocolate and add to the pan.

  • Cook until it is a soft glaze.

  • Then add the dark chocolate glaze onto the cool banana bread.
